- Heat a frying pan large enough to take the round tortilla bread
- Add a knob of butter to the frying pan
- Thinly slice around 6 pieces of manchego
- Add a tortilla to the pan, dot the manchego on top, then add another piece of tortilla on top and gently press down.
- Cook for around 2-3 mins, then turn over and cook for a further 2-3 mins
- Remove, slice and serve
